IT WAS on my third trimester of pregnancy when I was suddenly craving for yema, a Filipino-style candy made from simmered condensed milk. My mom used to make some for us when we were kids and they were so sweet, chewy and really good. Ahhh... a sense of nostalgia washed over me just thinking about it. So I decided to make some in my tiny kitchen, though I have had no idea how to prepare and make it. But thanks to the internet, I could prepare and do anything I want to eat because recipes are widely available online.
After a few surfs from the internet, I was ready to make my own yema. But since I should avoid eating food with high amount of sugar as advised by my doctor, I decided to create my very own recipe, a healthier version, a slight twist from the traditional Philippine-style yema candy.
I call it PUMPKIN YEMA CANDY. The sweetness is just right. It does not hurt your throat from too much sugar, and it really is tasty. It's perfect for my cravings and safe for my pregnancy with pumpkin as one of its main ingredients, making it a healthy candy for my baby and myself.
The procedures in making the Pumpkin Yema Candy is just similar to the traditional yema, except that the condensed milk used in my own recipe is reduced into half and substituted with fresh milk instead, and the pumpkin added, of course.
Here are the ingredients I used in making them:
1/4 mashed pumpkin
1/2 can of condensed milk
5 tablespoons of unsalted butter
2 egg yolks
1/2 cup milk
Here's how I made it:
1. Place the butter in a heated sauce pan (I just used a small frying pan for this) until it melts.
2. Then add the condensed milk and continuously stir for about three minutes.
3. Add the fresh milk and stir for two minutes.
4. Add the egg yolks and stir for another two minutes.
5. Adjust the fire and set it to medium.
6. Add the mashed pumpkin and mix them well. Continue stirring the concoction for about 15 minutes or so, or until it becomes thick. As the desired textured is slowly achieved, adjust the fire to low.
7. Turn off the fire and let it cool.
8. Shape the mixture into small balls and wrap them in colorful wax papers or candy wrappers.
